• Macadamia Nut Crusted Salmon

Amount

Salmon Fillets

1 per person about 6 ounces

Macadamia Nuts (roasted)

about 2 ounces per filet
(plus a few extra reserved for garnish)

Olive oil

about 1 ounce per filet plus a little to cook with

Turn on oven to 375.

Dry the salmon and turn skin side (smooth side) down.

Using a stick blender and its work jar, or a measuring jug, process the nuts and olive oil to make a thick paste.

Pour the nut oil mix to coat the surface of the filet.

Heat an oven proof saute pan on top of the stove. When it is hot (water drops dance across the surface) add a small amount of oil.

Then add the crusted filet skin side down. After a few minutes put the pan into the oven and cook for about 8 minutes. Make sure you don't over cook the filet.

While the filet is cooking crush a few of the nuts to make some "crumbs".

Serve on a bed of wild rice garnished with nuts.
