Lay the basil leaves on top of one another. Roll them up and slice across the roll to form small ribbons. Slice the tomatoes and place in a bowl layering with the basil. Sprinkle a little salt and pepper on the mix. Combine the oil, vinegar, garlic, salt and pepper. After making sure the ingredients are fully mixed taste your vinaigrette if it tastes too "harsh" add a little honey to temper it. Pour over tomato mix and toss. The flavour of this salad improves if you let it rest for an hour or two before eating and you serve it at room temperature |
